Mermaid Rice Burger

Mermaid Purple Cauliflower Rice Burgers

Cauliflower Patty Ingredients:

  • 1 cauliflower head
  • 3/4 cup all purpose gluten free flour
  • 1 tbsp tomato paste
  • 2/3 cup water
  • 2 tsp garlic powder
  • 2 tsp onion powder
  • 2 tsp smoked paprika
  • 1 tsp dried parsley
  • 1 tsp cumin
  • 1/4 pepper
  • 1/4 salt

Ranch Crema Ingredients:

  • 1 tsp apple cider vinegar
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp dried dill
  • Salt & pepper
  • 1 tsp pure maple syrup
  • 1 tsp blue spirulina
  • 1 tsp green spirulina
  • All powders for color from @rawnice on instagram


1. Cut the cauliflower in half and then into two thick slices, one inch thick.
2. Add all patty ingredients into a bowl first, mix and then pour into a flat container that you can dip the cauliflower into.
3. Now dip each side of the cauliflower burgers into the patty mix and set on parchment paper in a baking pan.
4. Bake at 450F/230C for around 25 minutes.
5. Make the crema sauce by hand in a bowl or add to blender, whichever you prefer.
6. Serve with caramelized onions, red onions, lettuce, tomato, and pickles.
