Let's talk Italian food! I’ve spoken with many Italians who fear going vegan or have an extremely hard time approaching it because of their upbringing. It’s almost somewhat of an insult to fathom turning your back and committing to a fully plant based lifestyle. I’ve always enjoyed challenges and how to re-create dishes to something vegan friendly. Today is one of those creations for all those who are Italian or just love their food in general.

So who didn't love Italian food growing up? I know I sure did - pizza, spaghetti, lasagna - my mouth is watering thinking about it. Oh my god… how could I forget the garlic bread! That buttery fatty oily delicious smelly garlic bread. My nose is making funny shapes as we speak. Okay, now I’ve just realized I forgot to make any garlic bread for this dish. I sure hope you can forgive me, my friends. You know, since you’re reading this, it’s not too late to make your own! Just use some Earth Balance or any vegan friendly butter you can find!

Today I’ve created one of the classic favorites no matter where you grew up. Spaghetti and meatballs with a twist! Red lentil pasta with jackfruit meatballs! How many of you have worked with jackfruit before? It’s becoming my secret weapon for meat replacements. Make sure it's young jackfruit, not the actual ripened fruit itself. You can pick up a can of jackfruit for less than 2 bucks at your local market, but, if you can’t track any down, search Indian and Asian markets! Today I used an amazing product I found that is already pre-shredded and ready to go from Edward & Sons. Such a brilliant idea. When I found it, I couldn’t resist trying and fell in love with it. It saves you prep time being pre-shredded; for people like me, that's priceless at times.

I used some red lentil pasta for this dish, mainly because I prefer non-wheat pastas and secondly, the color. Unfortunately the color didn’t translate as I wanted to but it’s still a winner in my book! I have to say that chickpea pasta is my absolute favorite and the only reason I didn’t get it this time was because I wanted something red to pop for the photo but… it didn’t work out so well, did it?! Alright, I have rambled on enough here, so let's get to the part you’re all waiting for, the recipe! Enjoy, my friends.

Red Lentil Pasta and Jackfruit Meatballs

Serves: 2
Active Time: 20 minutes

Ingredients

Directions

  1. Add jackfruit, worcestershire, water, bouillon to pan on medium heat (drain and shred the jackfruit first if you are using canned jackfruit)
  2. Cook until it simmers a few minutes and then reduce the heat and cook longer, until the water starts to evaporate out
  3. Once that is done, try and drain your jackfruit again into a strainer, pressing down with a spatula
  4. Toss it into a bowl, then add everything else in the list, and mix until everything is combined
  5. Add 1 tbs oil to a pan on medium-low heat and cook till each side is golden or looks good to your liking
  6. In the meantime, cook your pasta and sauce however you usually prefer. You can also put the meatballs in the sauce and toss them around while it's heating up. Enjoy!
