Made this dish vegan by asking for salad without Parmesan. The peppery arugula and smoked
salt made a sort of Parmesan flavor anyway. The lemon oil was nice, but I would have liked more lemon flavor. And would have liked more orange zest. Love the idea….just wanted more some components!
