I don't use much flour, but when I do I reach for this King Arthur
Baking Company flour. It works well for all baking and breading uses that I have tried it in.
I like that it is unbleached, since I mainly use it for breading the unbleached texture is not a factor for me. Plus the company is employee owned . . . nice!

Pretzel rolls made from what would have been my discard from my weekly sourdough starter

Another washed flour experiment using King Arthur 12.2% protein flour. This particular seitan came out
absolutely EXACTLY the way I wanted it! Tender and juicy and shreddable. Highly recommend purchasing this flour to make washed flour seitan.

This flour is great, as it is both affordable and high quality. I’ve been
using for a few months and have great results with my baking projects. I originally purchased this bag at Walmart but it is available at other retailers.
