In the first picture: beans and soy mince chili, on the side cauliflower nuggets.

Ages ago, while I was traveling in Greece, I found in a Supermarket this soy mince. I was a bit surprised, since up to that point I hadn't found a lot of vegan products (I was mainly visiting small islands). But this was cheap and the bags were pretty big! In Italy it's not a product that I manage to find in my local supermarket, and so I decided to get two bags to bring home.

It's not a product that I use very often, so I still have a bit. Until a few days ago, I hadn't found yet the best way to enjoy it, but with this chili.... I would eat it everyday 😍

mchiarag Sorry for my late answer but it's exam season😅 I'll write it here in case anybody else interested. I promise it's really good, but I've never tried actual chili so I'm not sure that is how it's supposed to taste.

For the chili:
Heat up some oil with onions cut in medium-large chunks and finely cut garlic, and then add ~80g of soy mince. Toast them together before adding beans, I used 480gr of cooked beans. Then add tomato paste and tomato sauce. I didn't measure how much, just to cover everything nicely. Then loads of spices! I used: coffee, sumac, nutmeg, thyme, ginger, clove, cumin, cinnamon, coriander. Plus, a teaspoon of miso paste! I let it cook for about 90 minutes.

For the cauliflower nuggets:
- 1/2 cauliflower
- ~70gr of flour
- 130gr unsweetened plant milk
- 100gr breadcrumbs
- nutritional yeast
- salt

First I put every cauliflower top inside the mixture of milk and flour, and then inside the breadcrumbs and nutrional yeast. Then I put everything in the oven with a generous amount of olive oil for about 20 minutes at 180⁰C.1 likeReply
