I’ve been vegetarian since I was 16 years old in 1986 (vegan for the last 3) and somehow I have never bought soy curls to make at home?! 🤔 I kept seeing them come up on ig recipes so we ordered some from Amazon for the pantry. Last night, I decided to break them out and mixed with some stuff I had on hand to go with fried rice. I used cabbage, onion, garlic and jalapeño and added the soaked soy curls, then finished with a quick sauce of dark soy and mirin. The soy curls were super easy and they really absorb the flavor of the sauce. In this preparation though, I’d rather use firm tofu. Maybe there’s another recipe that these will work better. All in all, I’m not sure I missed anything not eating these all these years but they were convenient and could be useful in the right dish. I’ve got a couple more bags in the pantry and will try again.

beckyyy This looks great! After you rehydrated the soy curls, did you squeeze the liquid out? I let mine soak for a bit, but squeeze out the extra moisture before frying. This way they can brown easier and the texture is firmer.

I had a similar journey as a long time vegetarian before going vegan. I went vegetarian at 14 and have now been vegan 6.5 years. 😊3 likesReply
triciaa Thanks for the tips! I did drain the liquid but might not have gotten enough of the water out. I’m going to make sure to squeeze them next time or maybe even put them in my tofu press. We had some leftovers I heated up the next day and they did taste even better. Definitely interested to experiment more.

Love that you went veggie at 14! When I did at 16, I originally committed to try it for one week but never looked back. This month is actually my anniversary because I’ll never forget it was right before thanksgiving. Everyone was worried what I would eat 😂😂2 likesReply
