Every trip to Rome must schedule several visits to Rifugio Romano - because there are more than one dish worth it.
This frittata made of chickpeas is moist and thick, and covers (I wish I would have taken pictures again) creamy vegan cheese and prosciutto.
It is absolutely decadent and satisfying. A great option if you don’t want pizza or pasta
