Review of Marinated Veggies: Eggplant, Peppers & Zucchini - Green Giant by beckyyy

I love scratch cooking but don’t always have the time or energy for it so I like to keep some frozen veggies on hand. This mix was so tasty; it reminds me of my fave marinated veggie mix from Trader Joe’s that was sadly discontinued a few years ago (RIP Misto Alla Griglia 😩). It is very flavorful!

If you’re iffy on frozen veggies due to textural issues, I’d recommend sticking with mixes similar to this - the veggies are already roasted to a soft texture as you’d expect out of the oven and the freezing process doesn’t seem to make much of a textural difference like it would for say a pea pod that you’d want to still have some crunch. The marination of the veggies also makes it so easy to prepare as you don’t have to add any additional oil; I simply empty the bag in a pan, put on the lid and heat on med/low until they’ve thawed, then take off the lid and stir fry to get up to temp.

I took these veggies, added some soy curls, tomatoes and basil and threw into a few pitas with some cashew goat cheese and it was a super satisfying and flavorful meal that was done fast.
