Mild - more mild than Kimchi. I don't mind the smell at all. It fizzes and overflows when you first open the jar, so do it in a bowl (then you can drink the liquid 😉 afterwards). Onions, carrots 🥕 , cauliflower and a bit of broccoli 🥦. Not a lot in it, but very, very nice. I intend to use the juice in cheeze sauces. I'll let you know how it turns out ...
